Anhui is one of the provinces of the People’s Republic of China and is located on the eastern part of the country across the basins of the Yangtze and the Huai River. On its border in the eastern side is the Jiangsu province, in the southwest is the Hubei province, in the southeast, the Zhejiang province, in the south, the Jiangxi province, and the provinces of Henan and Shandong in the northwest and north respectively. The city of Hefei is the capital of the province.
NOMENCLATURE
The province derives its name from the two erstwhile cities of Anqing and Huizhou in the southern part of Anhui. The two cities together are now known as Huangshan City. Wan is the abbreviation used to denote the city of Anhui. This is because in the days of yore, there used to be a river, a mount and a state with the name of Wan in the Anhui province.
ADMINISTRATIVE UNITS
With a total area of 139,600 square kilometers, Anhui province is the 22nd largest province in the country. For administrative convenience, the province is divided into one thousand eight hundred and forty five small towns, one hundred and five counties and seventeen prefectures.
POPULATION
According to the 2012 census, the total population of the province stands at 59,900,000, making it the eighth most populated province in the People’s Republic of China. Altogether 99 per cent of the population belongs to the Han community while the Huis constitute 0.6 per cent of the population.
LANGUAGES & DIALECTS
Jianghuai, Mandarin, Gan, Wu and Huizhou are the common forms of languages and dialects used in the province.
TRACING THE ROOTS
The roots of contemporary Anhui Province have been traced to 1666 when Anhui and Jiangsu were split as separate provinces during the reign of the Manchu Qing Dynasty. The present province has retained the same borders from that time onwards. The capital of this province was shifted from Anging to Hefei in 1946. Though Anhui was separated into the two administrative regions of Wanbei (North Anhui) and Wannan (South Anhui) following the founding of the People’s Republic of China in 1949, the those two provinces were brought together in 1952.
TOPOGRAPHY
The topography of the Anhui province is diverse. While the northern and north central areas of the province are flat and densely populated, being parts of the North China Plain and the Huai He River basin, the land becomes undulating as one proceeds southwards. The south eastern and south western parts of the province are covered by a series of hills and mountain ranges, prominent among them being the Dabie Mountains, occupying a major portion of the south western areas. The Yangtze River flows through South Anhui.
CUISINE
Because of the comparatively simple methods of cooking combined with the use of traditional herbs and elements of cooking from the northern, south central parts of the province, Anhui cuisine is regarded as one of the eight great traditions of Chinese cuisine.
